In-N-Out is constructing its largest-ever location on the Las Vegas Strip, featuring 8,000 square feet of indoor dining space and a 2,500-square-foot patio. The new restaurant will be situated on the third-floor roof deck of The BLVD, a 400K square-foot retail and entertainment complex at 3755 S. Las Vegas Blvd.

This marks In-N-Out's second Strip location, following its 2022 opening at the LINQ Promenade. The chain now operates nearly 14 locations in Las Vegas and over 400 nationwide.

The Venetian is also expanding its dining options with Via Via, a new food hall opening next summer in the Grand Colonnade. Notable tenants will include:

  • All'Antico Vinaio: Famous Florentine sandwich shop
  • B.S. Taqueria: LA-based chorizo specialist by chef Ray Garcia
  • Howlin' Ray's: Nashville hot chicken from LA
  • Ivan Ramen: High-end ramen by chef Ivan Orkin
  • Scarr's Pizza: New York-style pizzeria
  • Turkey and the Wolf and Molly's Rise and Shine: New Orleans eateries by James Beard winner Mason Hereford

Additionally, Bazaar Meat by José Andrés will relocate to the Venetian's Palazzo Tower from the Sahara.

Via Via represents the fifth new food hall in two years, signaling a shift from traditional casino buffets to more profitable dining options. This transition reflects the evolution of casino revenue streams, with gambling now accounting for only 25% of total revenue, compared to 75% from hotel operations, dining, and entertainment.

Other dining updates include:

  • Brunello: New Italian restaurant opened in Summerlin
  • The Cosmopolitan: Potentially replacing Holsteins with Naughty Patty's, though the space is already promised to Amaya Modern Mexican Restaurant
